Death by Chocolate Paleo Brownies

Death by Chocolate Paleo Brownies

My dad would absolutely love the name of these paleo brownies. His favorite cake of all time is the death by chocolate cake from Gregg’s Restaurant in Rhode Island. It’s ridiculously delicious, but these paleo brownies are pretty dang good too. And guess what? There’s no guilt after eating them. These ooey-gooey brownies will blow your mind. The brownies barely lasted us the week, but I don’t feel bad about it. Just like all the other paleo desserts I make, these poor things never stand a chance.

Cassie and I found this recipe on pinterest. I never was a pinterest person, but I’ve found some amazing recipes lately that I can’t wait to try.

Paleo Brownies

Ingredients:

  • 1 cup of mashed bananas (about 2 bananas)
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons coconut milk or coconut water
  • 1/2 cup dairy free chocolate chips
  • 1 cup cocoa powder
  • 1/4 cup of honey
  • 1/2 teaspoon baking soda

Instructions:

  1. Preheat your oven to 355 degrees F. Next grease a 9×9 inch baking dish.
  2. Place everything into a blender except for the baking soda. Blend until smooth.
  3. Add in the baking soda and spread the batter into the baking dish.
  4. Bake for 25-30 minutes or until the knife comes out clean.
  5. Let the brownies cool for about 10 minutes before removing them from the dish.

**Don’t skip step 5, it is super important that you let the brownies cool before taking them out of the tin. They are super fudgy so they will probably just fall apart if you don’t let them cool first.

Top them off with some sea salt (that’s what we did). Or whatever you fancy. Coconut flakes or powdered sugar would be great, but then again they will be just as good without anything.

Enjoy!

Paleo Thumbprint Cookies For The Holidays

Paleo Thumbprint Cookies For The Holidays

Everyone loves a classic chocolate chip cookie, but one of my all time favorites has always been a thumbprint cookie. My Nanny used to love these cookies so I decided to make a healthier version in her honor. These paleo thumbprint cookies are super delicious, and perfect for the holiday season.

They were quick and easy to make. They didn’t require too many ingredients, which is always a plus in my book. I found two recipes that I liked, one from Bakerita and one from Texanerin, and experimented a little bit, taking a few ingredients from both recipes to make my own. I made these paleo thumbprint cookies for our Thanksgiving dinner and our friends loved them. They were gone within the first few minutes of putting them out. Keep in mind there were only 4 of us…

Paleo Thumbprint Cookies:

Here’s how to make them happen:

Ingredients:

  • 1 1/2 cups blanched almond flour
  • 1/4 cup of coconut oil, melted
  • 1/4 cup of coconut flour
  • 3 tablespoons of maple syrup (or sticky sweetener, I used agave)
  • 1 teaspoon of baking powder
  • 1/8 teaspoon of salt
  • 1 teaspoon of vanilla/almond extract
  • 1 egg, room temperature
  • 1/4 cup of your choice of jam (I used raspberry)

Instructions:

  1. Preheat your oven to 350 degrees.
  2. Line a cookie sheet with parchment paper.
  3. Mix all ingredients together to form a dough. I put it into the fridge for about 20 minutes after to let it harden a bit.
  4. Use a tablespoon to form about 15 cookies and put a thumbprint in them.
  5. Place a bit of the jam in each cookie.
  6. Cook for about 8-10 minutes or until they look golden brown on the edges. Let them sit for about 5 minutes or so.
  7. Enjoy!

**Note: My cookies came out a little moist. I provided the other recipes for you to take a look at if you want to try something different. Let me know if you decide to make them.

Happy Baking!

Spelt Flour Pancakes with Pan-Fried Honey Bananas

Spelt Flour Pancakes with Pan-Fried Honey Bananas

I’m honestly confused with my tastebuds lately. If you’ve read any of my previous posts you know I’m all about savory in the morning. Growing up I was always the child that wanted eggs and toast. I remember going to this breakfast restaurant near our house called E & J’s. We went there many a Sunday after church as a family. I ordered the ham and cheese omelette with a side of toast and my sisters ordered chocolate chip pancakes.

I was never about pancakes, even when my dad would make them I’d ask for eggs instead. But recently I’ve been on a sweet kick. I was super skeptical about these spelt flour pancakes because the batter was really thick. Thomas took the first bite because I was nervous they didn’t turn out very good. “They are so delicious,” he said. I dug in and let me tell you they were absolutely amazing.

Spelt Flour Pancakes:

Ingredients

  • 2 cups of spelt flour
  • 1 tablespoon of sugar or sweetener
  • 1 tablespoon of baking powder
  • 3/4 teaspoon of salt
  • 1 3/4 cups of almond milk
  • 2 tablespoons of butter (melted)
  • 2 teaspoons of vanilla (optional)

Instructions

  1. In a medium bowl, whisk together the spelt flour, sugar, baking powder, and salt.
  2. Combine the milk, butter, and vanilla (if you use it).
  3. Form a “well” in the center of the dry ingredients, and pour in the wet ingredients. Stir the batter just until the dry ingredients are thoroughly moistened. It might seem very wet, but it will thicken as it sits. Let it sit for about 15minutes before you use it.
  4. Heat up a pan with your choice of oil (I used coconut oil). When the surface is hot enough pour of some of the batter, 1/4 cupful. Let the pancakes cook on the first side until it starts to bubble. I cooked them for about 2 minutes each side. They should look golden brown!

Pan-fried Honey Bananas:

Ingredients

  • 2 ripe bananas
  • 1 tbsp coconut oil
  • 2 tbsp honey
  • 1/2 tsp cinnamon
  • 1/8 tsp salt

Instructions:

  1. Remove the peels from the bananas and slice into 1/2 inch thick slices
  2. Set a skillet on medium-high heat (non-stick skillet if you have one). Add oil, honey, cinnamon, and salt into the pan. Lay down the slices and fry for 2-3 minute each side. They should be nice and golden.
  3. Take them off the heat and enjoy!
