Healthy Comfort Food: Shrimp & Spinach Pasta

Italians love there pasta, that’s just a fact. Being that I’m Italian, every now and then I crave pasta. Thomas and I were both in the mood for some healthy comfort food so I looked into a couple of different recipes.

The shrimp and spinach pasta dish popped out at me. It looked easy to make and it was packed with protein. So we decided to give it a try.

Healthy Comfort Food:

Ingredients: 

  • 1 pound of shrimp, peeled & deveined
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon sea salt
  • 1/4 cup of sun-dried tomatoes, chopped and drained from oil
  • 3 garlic cloves, minced
  • 3 ounces of fresh baby spinach (about half the bag)
  • 1 and 1/3 cups of unsweetened almond milk
  • 1/8 teaspoon paprika
  • 1/2 cup of mozzarella cheese (shredded)
  • 6 fresh basil leaves, chopped
  • mushrooms (optional)
  • Bacon (optional)

Ingredients: 

  1. Crisp up the bacon if you choose to use it (but let’s be honest why wouldn’t you). Add 1 tablespoon of olive oil from the sun-dried tomatoes into a large skillet. Cook the shrimp on medium high heat for 3 minutes or until pink. Season with salt and pepper.
  2. Add sun-dried tomatoes, drained mostly of oil. Be sure to add 1 more tablespoon of the sun-dried tomato oil and the minced garlic. Mix together and cook for another minute. Remove the shrimp.
  3. In the same skillet as the sun-dried tomatoes add in the almond milk, 1/4 teaspoon salt, paprika, and then bring to a boil. Reduce to a simmer and add your mozzarella cheese. Stir to melt, on simmer. Add in chopped fresh basil and mix. Next add in the fresh spinach. Cover with a lid and remove from the heat. The spinach will wilt while you cook your pasta of choice (we used a whole wheat penne).
  4. Once the pasta is finished add it into the shrimp & spinach skillet. Stir around to coat the pasta and add more salt if needed.

**Note: we kept the bacon in the skillet the entire time.

Healthy Black Bean Burgers

Healthy Black Bean Burgers

Trying to cut back on meat? Or just looking for something new for dinner? These black bean burgers are healthy and super easy to make.  And delicious!

This past week Thomas and I decided to switch things up a bit. We usually eat meat for dinner, but this time we tried something different. After watching a documentary I realized that we definitely eat too much meat. I figured it wouldn’t hurt us to go a week without meat and try some new recipes.

I found this recipe on allrecipes.com, but altered it a little bit.

Healthy Black Bean Burgers:

Ingredients: 

  • 1 (16 ounce) can of black beans – here in Spain they don’t really have many canned beans so we soaked ours over night, cooked them, and then measured them out.
  • 1/2 green bell pepper, minced
  • 3 cloves of garlic, minced
  • 1/2 onion, minced
  • 1 egg
  • 1/2 tablespoon of chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon of Thai chili sauce or hot sauce (I used Valentino)
  • 1/2 cup of bread crumbs

**Note: If you like a lot of heat use 1 tablespoon of chili powder and 1 teaspoon of hot sauce to really give it an extra kick!

Instructions: 

  1. If grilling the burgers, preheat on high. Lightly oil a sheet of aluminum foil. If you plan to bake them , preheat the oven to 375 degrees , and lightly oil a baking sheet.
  2. In a medium bowl, mash black beans up with a fork until they are thick and pasty.
  3. Add in your finely minced green peppers, onion, and garlic. Then stir into the mashed up beans
  4. In a small bowl, stir together the egg, chili powder, cumin, and chili sauce.
  5. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture becomes sticky and holds together. Divide the mixture up into four patties.
  6. If you plan to grill them, place the patties on foil, and grill for about 8 minutes on each side. If baking, place the patties on the baking sheet, and bake for about 10 minutes on each side.
  7. Top the burgers with your favorites. We decided on roasted sweet potatoes, tomatoes, and avocado. The sweet potatoes and the avocado really balanced out the heat!

***Note: If you have a food processor feel free to put the green pepper, onions, and garlic in there. We just don’t have one so we minced everything up and it worked out just fine.

Hiking in Alcudia, Spain: Where the Sea Meets the Sky

One thing Mallorca is known for is the hiking. And this isn’t just trails you’re hiking, this is full on mountains. We really didn’t mentally prepare ourselves for this excursion the other weekend, but we powered through.

Matt and Cassie (the couple we met) asked us if we would like to join them on their hike in Alcudia. One of the things I was most excited about when we decided to move to Spain was the nature. I knew I was going to see some breath taking views. So obviously we said we’d love to go with them!

This hike was seriously unreal. It was totally worth the heavy breathing and sweat. It’s funny because we were most worried about the dog, but he was a trooper. And he was always way ahead of us.

Hiking is something I’ve loved to do since I was a young girl. My family owns property in upstate New York (Catskills area). We were always going on hikes, but that’s a story for another time.

When we got to the top of the mountain in Alcudia, I took a minute to really take everything in. The sea and the sky meshed together beautifully. You really couldn’t tell which was which: “where the sea meets the sky”. Being on this adventure so far has been unexplainable. I’ve had my ups and downs, but every time we go out into nature and take time to appreciate the little things I remember why I’m here.

Hiking Or Rock Climbing?

After the hike we decided to find a dog friendly beach so we could go for a swim, seeing as we were all dripping sweat. There was a beach up the road, but yet again we were totally unprepared for what was to come. There was really no trail to the beach so we ended up doing some impromptu rock climbing. It basically turned into another hike. It wasn’t anything we couldn’t handle, but we really didn’t see it coming.

But my Lord, when we got to that secluded beach where the goats roam free, I felt something come over me. The water was crystal clear and there was a sense of calm.

Nature really does nurture and these hikes have really helped me cope with being so far away from home. What has been even better was meeting another couple and sharing those moments with them. Thomas and I were so grateful that they asked us to come along with them.

Our photos don’t do any of it justice, but thank god Matt has a good eye and a beautiful camera.
