Vegetarian Crunchwrap Supreme that will leave you wanting another…

For black beans filling
* 1 tablespoon cooking oil
* 1 tablespoon garlic minced
* 1 15oz can black beans
* ½ cup salsa using store-bought.
* ½ teaspoon cumin seeds powder
* 1 teaspoon Red chilli powder or paprika
* salt and black pepper to taste

For Avocado Crema:
* 2 ripe avocados
* ¼ cup sour-cream or full fat plain yogurt (we used @fage)
* ½-1 jalapeños de-seeded, adjust to taste
* 1 clove garlic
* ½ lemon juiced, adjust to taste
* ¼ cup cilantro leaves
* ⅛ tsp pepper powder adjust to taste
* ½ teaspoon salt adjust to taste
* ¼ teaspoon cumin seeds powder

For Vegetarian Crunchwrap Supreme
* 4 large tortillas burrito size, 10inch or larger.
* 4 small tortillas taco size, 4-5 inch or smaller.
* 4 tostadas
* Black beans filling
* Avocado cream as needed, homemade or store-bought.
* 1 tomato finely chopped
* ½ red onions finely chopped
* 2-3 green onions chopped
* 2 tablespoon cilantro chopped
* 2 cups shredded lettuce
* 2 cups shredded Cheese using Mexican cheese blend
* Pickled jalapeños optional and as needed, adjust to taste.

Banh Mi Bowls
+ the perfect light summer dish.

Ingredients
Pickled Veggies
* 1/2 cucumber thinly sliced
* 4 radishes thinly sliced
* 1 small carrot julienned
* 1 jalapeño pepper sliced
* 1/3 cup rice wine vinegar
* 1/3 cup water
* 1/2 tsp sea salt
Banh Mi Bowl
* 2 tbsp avocado oil or your favorite cooking oil
* 1 lb cauliflower rice
* 4 garlic cloves minced
* 1 lb ground pork
* 2 tbsp coconut aminos
* 1 tbsp fish sauce
* 1 tbsp lime juice
* 1/2 tsp ground black pepper
* cilantro for garnish
Sriracha Mayo
* 1/4 cup Mayo
* 1 tbsp sriracha
* 1/2 tsp lime juice

Instructions
* Before cooking, make the pickled veggies: Whisk together rice wine vinegar, water, and salt in a wide, shallow bowl. Add the sliced vegetables to the mixture and toss gently. Soak while cooking the cauliflower rice and pork. 
* Combine all ingredients for the sriracha mayo and set aside. 
* Heat 1 tbsp of avocado oil in a skillet over medium high heat. Add cauliflower rice and cook stirring for 5 minutes until tender. Remove from heat and divide into 3 bowls. 
* Heat another tbsp of avocado oil then add garlic. Cook for 1 minute until fragrant. 
* Add ground pork, then cook while breaking it up for about 6-7 minutes until browned. 
* Stir in coconut aminos, fish sauce, lime juice, and pepper. Remove from heat. 
* Divide the meat over the cauliflower rice. Top with pickled veggies, then drizzle with sriracha mayo. Sprinkle with cilantro, and enjoy!

Try these no bake peanut butter chocolate oat cups when you’re craving something sweet.

Ingredients:
1 cup old fashioned rolled oats
1/4 cup almond flour
1 cup peanut butter
1/2 cup maple syrup
1/2 tsp salt
1 tsp vanilla extract
2 scoops of Arbonne vanilla protein *optional

Chocolate Peanut butter topping:
1/2 cup chocolate chips
2 tbs of peanut butter

These are so easy to make and super delicious. Store them in the fridge or freezer for the perfect dessert. #nobake #nobakedessert

The perfect summer night dinner: Chicken Avocado C

The perfect summer night dinner: Chicken Avocado Caprese Salad 🥗

INGREDIENTS

Marinade/Dressing:
* 1/4 cup balsamic vinegar
* 2 tablespoons olive oil
* 2 teaspoons coconut/brown sugar
* 1 teaspoon minced garlic
* 1 teaspoon dried basil
* 1 teaspoon salt
Salad:
* 4 chicken thigh fillets, skin removed (no bone)*
* 5 cups Romaine, washed and dried
* 1 avocado, sliced
* 1 cup cherry or grape tomatoes, sliced
* 1/2 cup mini mozzarella / bocconcini cheese balls
* 1/4 cup basil leaves, thinly sliced
* Salt and pepper, to season

NSTRUCTIONS
* Whisk marinade ingredients together to combine. Place chicken into a shallow dish; pour 4 tablespoons of the dressing / marinade onto the chicken and stir around to evenly coat chicken. Reserve the untouched marinade to use as a dressing.
* Heat about one teaspoon of oil in a large grill pan or skillet over medium-high heat and grill or sear chicken fillets on each side until golden, crispy and cooked through. Once chicken is cooked, set aside and allow to rest.
* Slice chicken into strips and prepare salad with lettuce, avocado slices, tomatoes, mozzarella cheese and chicken. Top with basil strips; drizzle with the remaining dressing; season with salt and pepper; serve.

*save this for dinner or meal prep one night this week!

I promise…

I promise not to let our children ever see me do these things because I’m working on it.
I promise to show them how strong I am.
I promise I will let them know every day how beautiful they are inside and out.
I promise I will encourage them to chase their dreams no matter how big or small.
I promise I will continue to work on myself so I can be the best version of myself for both you and our children.
