It’s crazy how different pregnancies can be. Wit It’s crazy how different pregnancies can be. With Theo I was taking photos every week, I was constantly checking the app, and I felt like I was way more “present” for the entire thing. This pregnancy has been completely different for me. I’m now chasing after a toddler, working, and just trying to make it through the day. But today I asked Thomas to take a photo of me because I truly haven’t “documented” much at all. I told myself I would try to be a little more mindful during my pregnancy because it’s flying by. I think sometimes we take for granted how amazing pregnancy is especially when we’ve already done it before. We just go through the motions and forget to soak up all the beautiful moments we experience. This morning I called Thomas and Theo over to watch the baby move, and although Theo can’t truly comprehend it yet it was a magical moment. I will try to remain present for the rest my pregnancy. I will practice gratitude every day for being blessed enough to experience this miracle not once but twice. #24weekspregnant #pregnancy

4 ingredients protein buckeyes: For the balls: 4 ingredients protein buckeyes: 

For the balls: 

1 cup peanut butter 
2 tbs honey 
1 tsp vanilla extract 
2-3 scoops of @arbonne vanilla protein (or any protein you have on hand)

For the chocolate: 

1 cup dark chocolate chips 
1-2tsp coconut oil 

* Add all the ingredients into a bowl and put them on a sheet with parchment paper. Place in the freezer for 40 minutes. 

* Then dip them in chocolate and freeze again. Seriously so easy and super delicious!

For black beans filling
* 1 tablespoon cooking oil
* 1 tablespoon garlic minced
* 1 15oz can black beans
* ½ cup salsa using store-bought.
* ½ teaspoon cumin seeds powder
* 1 teaspoon Red chilli powder or paprika
* salt and black pepper to taste

For Avocado Crema:
* 2 ripe avocados
* ¼ cup sour-cream or full fat plain yogurt (we used @fage) 
* ½-1 jalapeños de-seeded, adjust to taste
* 1 clove garlic
* ½ lemon juiced, adjust to taste
* ¼ cup cilantro leaves
* ⅛ tsp pepper powder adjust to taste
* ½ teaspoon salt adjust to taste
* ¼ teaspoon cumin seeds powder

For Vegetarian Crunchwrap Supreme
* 4 large tortillas burrito size, 10inch or larger.
* 4 small tortillas taco size, 4-5 inch or smaller.
* 4 tostadas
* Black beans filling
* Avocado cream as needed, homemade or store-bought. 
* 1 tomato finely chopped
* ½ red onions finely chopped
* 2-3 green onions chopped
* 2 tablespoon cilantro chopped
* 2 cups shredded lettuce
* 2 cups shredded Cheese using Mexican cheese blend
* Pickled jalapeños optional and as needed, adjust to taste.

Banh Mi Bowls + the perfect light summer dish. Banh Mi Bowls 
+ the perfect light summer dish. 

Ingredients
Pickled Veggies
* 1/2 cucumber thinly sliced
* 4 radishes thinly sliced
* 1 small carrot julienned
* 1 jalapeño pepper sliced
* 1/3 cup rice wine vinegar
* 1/3 cup water
* 1/2 tsp sea salt
Banh Mi Bowl
* 2 tbsp avocado oil or your favorite cooking oil
* 1 lb cauliflower rice
* 4 garlic cloves minced
* 1 lb ground pork
* 2 tbsp coconut aminos 
* 1 tbsp fish sauce 
* 1 tbsp lime juice
* 1/2 tsp ground black pepper
* cilantro for garnish
Sriracha Mayo
* 1/4 cup Mayo 
* 1 tbsp sriracha 
* 1/2 tsp lime juice

Instructions
* Before cooking, make the pickled veggies: Whisk together rice wine vinegar, water, and salt in a wide, shallow bowl. Add the sliced vegetables to the mixture and toss gently. Soak while cooking the cauliflower rice and pork.

* Combine all ingredients for the sriracha mayo and set aside.

* Heat 1 tbsp of avocado oil in a skillet over medium high heat. Add cauliflower rice and cook stirring for 5 minutes until tender. Remove from heat and divide into 3 bowls.

* Heat another tbsp of avocado oil then add garlic. Cook for 1 minute until fragrant.

* Add ground pork, then cook while breaking it up for about 6-7 minutes until browned.

* Stir in coconut aminos, fish sauce, lime juice, and pepper. Remove from heat.

* Divide the meat over the cauliflower rice. Top with pickled veggies, then drizzle with sriracha mayo. Sprinkle with cilantro, and enjoy!

Ingredients: 
1 cup old fashioned rolled oats 
1/4 cup almond flour 
1 cup peanut butter 
1/2 cup maple syrup
1/2 tsp salt 
1 tsp vanilla extract 
2 scoops of Arbonne vanilla protein *optional 

Chocolate Peanut butter topping: 
1/2 cup chocolate chips 
2 tbs of peanut butter 

These are so easy to make and super delicious. Store them in the fridge or freezer for the perfect dessert. #nobake #nobakedessert
