Since Thomas and I moved to Spain we haven’t made too many friends. It will definitely take some time, but we did recently meet a lovely couple. We met Matt and Cassie through the program we are doing here in Spain. They are from Wisconsin and they have an adorable dog (Lucca). When we ventured out on a hike with them last weekend and we came to learn that they are paleo.
Paleo has always intrigued me and I think it’s a great lifestyle choice. I wanted to try some new paleo recipes to share with them. I found this recipe for sweet potato pancakes. Recently I’ve been on a sweet potato kick!
I knew I needed to give them a try. They were extremely filling and super easy to make.
Here’s what you’ll need:
- 1/2 cup sweet potato, microwaved until soft and mashed
- 2 eggs
- 1 tbsp coconut flour
- 1 1/2 tsp cinnamon
- 1/4 tsp baking soda
- 1/4 tsp vanilla
- coconut oil, for pan
Instructions: Mix together the sweet potato and eggs first. Add in the rest of the ingredients until a batter forms. Oil the pan and add about 1/4 cup of batter. It made a total of three pancakes for me. Next time I will try doubling the recipe! If I had some all natural maple syrup I would’ve covered these beauties with them. However, I’ve yet to find it here in Spain so I used some honey, almond butter, and cinnamon!
I think I will try my hand in more Paleo recipes. It’s a great lifestyle choice and Cassie told me it has changed her life for the better.
