Looking to enjoy some dessert and not feel guilty about it? Try out this Paleo Banana Bread that I made. It is absolutely delicious. So delicious that I decided to make two loafs of it because one just wasn’t enough.
Thomas and I ate the first one in one day. To be honest I was a little skeptical of this recipe. I didn’t think it was going to be good at all. Thomas’ words after his first bite, “it is melt in your mouth good”.
After that we were both hooked. It was super easy to make it didn’t take long at all. We brought it over for our friends to try and they absolutely loved it. I think our friend Matt ate about 5 pieces of it.

Here’s what you’ll need for Paleo Banana Bread:
- 3 medium ripe bananas, mashed (about 1 1/4 cups mashed banana)
- 1 teaspoon vanilla extract
- 1/4 cup almond butter
- 2 eggs, at room temperature
- 1/2 cup coconut flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
INSTRUCTIONS:
Preheat the oven to 350 degrees. Be sure to grease the pan and or use parchment paper. In a bowl combine together the bananas, vanilla and almond butter; mix until well combined. Add in eggs, one at a time. Add in coconut flour, baking soda, baking powder, cinnamon and salt; mix again until just combined. Gently fold in chocolate chips.
Pour batter into pan. Bake for 30-40 minutes or until tester inserted into center comes out clean. Remove from oven and place on wire rack to cool for 20 minutes, then carefully remove bread from pan and place back on wire rack to cool completely. Cut into slices and serve!
**Please note this is supposed to be done with a mixer. I don’t have one here in Spain and mine turned out just fine.
