I think these Chocolate Stuffed Blondies might just be the best sweet I’ve ever made. They are melt in your mouth good. The best part, they are made with all real ingredients. Thomas and I paired them with ice cream one night and it was unreal.
You will absolutely want to try this recipe I found from, Joy Food Sunshine. I altered it a little bit, but not much! Don’t be intimidated by the process, it’s actually really easy.
Chocolate Stuffed Blondies
Ingredients:
For the Blondies
- 2 cups of almond flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 cup of almond butter
- 2 Tbs coconut oil, melted
- 1/4 cup of coconut sugar
- 2 Tbs honey or maple syrup
- 2 tsp vanilla extract
- 3 Tbs almond milk
- 1 egg
- 1/2 cup of chocolate chunks or chips
For the Filling:
- 1/4 cup almond butter (can be a chocolate almond butter if you have it)
- 1 Tbs cocoa powder
- 1 Tbs coconut oil
- 2 Tbs honey or maple syrup
Instructions:
- Preheat your oven to 350 degrees F. Grease a 9X5″ pan and set aside.
Make your Blondie Batter:
- Combine all your dry ingredients together (almond flour, salt, baking powder, and baking soda). Set it aside.
- Mix together your wet ingredients (coconut sugar, honey, vanilla extract, almond milk, and egg).
- Combine the wet and dry ingredients and mix well. If your batter seems a little dry feel free to add a bit more almond milk.
- Add in your chocolate chunks.
Make the Filling:
- Melt together the almond butter, honey, and coconut oil.
- Mix in the cocoa powder.
Put it all together:
- Spread 1/2 of the batter evenly on the bottom of your pan.
- Evenly spread the filling over the bottom layer
- Top with the remaining batter.
- Bake for 10-15 minutes or until it is slightly golden brown on the top.
- Let it cool for at least 10 minutes and serve!
